Dinner with the Knutsons & Perkins


Tonight we had dinner with the Knutson Family and the Perkins Family. Josiah was rocking on the guitar. I swear this child is going to grow up to be the next Jimi Hendrix! He has been fascinated with guitars for as long as I have known him. His baby sister Eden is so adorable. She is about six months old now and looks like a little pixie. Alyssa almost weighs as much as she does already! I can't believe how much the Perkins boys have grown since we saw them last either! Gideon and Isaac are so cute. If they weren't different sizes I would think they were twins. Lynn's third pregnancy is coming along, She is now 31 weeks and feeling good. Andy Perkins made a delicious strawberry and spinach salad. I don't normally like fruity salads, but this one was absolutely delicious! I made our favorite spagetti sauce. This is the recipe:

Brian's Favorite Sauce
Servings: 6

INGREDIENTS:
1 onion, chopped
6 tablespoons olive oil
2 cloves garlic, minced
1 pound sweet Italian sausage, casings removed
2 (15 ounce) cans tomato sauce
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano
1 teaspoon dried basil
4 (16 ounce) cans diced tomatoes
1 teaspoon salt
2 tablespoons white sugar
1 pinch cayenne pepper

DIRECTIONS:
In a large saucepan over medium heat saute chopped onion and garlic in the oil. Break up sausage into small pieces and brown. Add tomato sauce, ground black pepper, dried oregano, dried basil, chopped tomatoes, salt, sugar and cayenne pepper; stir well. Let simmer uncovered 15 to 30 minutes.

I usually double everything except the meat so I have enough to freeze and use in lasagnas and such later on. It was a great night of friends and fellowship!
